הרעיון להכנת פיצה אישית בסגנונן יווני נולד לפני מספר ימים כשאחד החברים שלי בפיסבוק זוראן הכין אותה ונתן שם חיבה לפיצה אישית בסגנון יווני ששמה המקורי Pizzolos, זוראן קרה לה Piccolo. ולמה בעצם הפיצה היא יוונית, כי במתכון משתמשים ברוטב פלפלים מתוק פיקנטי אג'יקה והציפוי הוא גבינת פטה עזים וזיתים שחורים. הפיצות האישיות טעימות לכולם ותמיד יעזרו לארגון יומי הולדת וכל אירוע משפחתי, ארוחה עם אורחים רבים או פיקניקים. ונעבור הישר למתכון הממכר. אל תתרגשו מאורך המתכון, זה רק כדי שהכל יהיה הכי ברור.

מצרכים להכנת רוטב פיצה אישית בסגנון יווני

  • 4 פלפלים מתוקים קלויים, מנוקים מקליפה וגרעינים – מומלץ בצבעים אדום, צהוב וכתום
  • קופסה קטנה עגבניות שרי מקולפות
  • סוכר חום
  • 2 שיני שום
  • כפית מלח או לפי הטעם האישי
  • 2 כפות שמן קונולה או זית – אני השתמשתי בשמן קונולה מעושר באומגה של יצהר
  • כף מיץ לימון טרי
  • כף חומץ בן יין 5%
  • כפית רוטב צ'לה

 

אופן הכנת פיצה:

  1. לערבב חלב, מים חמימים עם השמרים וכפית סוכר וכף קמח להכנת תפיחה. להמתין כ15-20 דקות עד השמרים תופחים.
  2. בקערה עמוקה לערבב קמח עם סוכר ולהוסיף עם תפיחת שמרים , שמן זית לסירוגן תוך עיבוד עם מעבד מזון, להוסיף מלח ולהמשיך לעבד את הבצק עד מתקבל כדור חלק, אלסטי שנפרד בקלות מדפנות הקערה.
  3. לכסות את הקערה עם מגבת ולשים את הבצק להתפחה במקום חמים לכשעה וחצי או עד שמכפיל פי 2-3 את מימדיו. ניתן להתפיח את הבצק גם ללילה במקרר.
  4. על משטח מקומח מעבדים עם הידיים את הכדור בצק שנוצר ומחלקים ל כ-12 כדורים קטנים יותר.
  5. מרדדים כל כדור דק כ0.6 ס"מ ומסדרים בתבנית מרופדת בנייר אפיה משומן.
  6. על כל פיצה מורחים  שמן זית ויוצרים  כמה גומות קטנות ומעל זה מורחים רוטב פלפלים ומפזרים גבינת פטה וזיתים, ורוזמרין. ממתינים כ5 דקות עד הפיצה תופחת קלות
  7. לאפות בתנור  שחומם מראש לחום כ220 מעלות. הפיצה מוכנה כשהתחתית זהובה ושחומה קלות וזמן אפיה משוער כרבע שעה.. להזהר מאפיית יתר

אופן הכנת רוטב:

  1. קולים פלפלים מתוקים ומנקים ההקליפה וגרענים.
  2. מעברים את הפלפלים הקלויים במעבד מזון עם עגבניות מקולפות ומוספים סוכר חום, מלח, מיץ לימון, חומץ, צ'ילה. מתקנים את הטעמים ומשתמשים לציפוי על הפיצה.
