הקדירה מתבשלת בבישול איטי בתנור ואין יותר בריא מאכילת בשר שהתבשל באיטיות, השיטה העתיקה שמבטיחה איכות וטעם מיוחד. רוצים לבשל כמו פעם, אז בואו ותקבלו מתכון לקדירת בשר ירקות מקורית "דמלמה" מהמטבח העשיר של אסיה התיכונה.

 

מרכיבים:

  • 2 קילו בשר לפחות, מומלץ בישול אסאדו, אוסובוקו או כל בשר לקדרה, לחתוך לקוביות גדולות – נתח אסאדו מומלץ לשמור שלם
  • 300-400 גרם ערמונים – התאמה אישית בלבד ואינו חובה
  • 2 פלפלים אדמים לחתוך לחתיכות גסות
  • 2 פלפלים ירוקים לחתוך לחתיכות גסות
  • 4-6 בצלים גדולים לחתוך לחצי
  • ראש שום שלם
  • חציל חתוך לפרוסות עבות – מומלץ להחליף גם בקישוא או זוקיני
  • 3-4 חתיכות כרוב
  • פלפלון חריף שלם – למי שאינו חובב חריף מומלץ לוותר
  • מלח ופלפל לפי הטעם
  • 2-3 בטטות חתוכות לקוביות גדולות – לא חובה
  • 2 כפות עלי פטרוזיליה וסלרי קצוצים דק
  • כפית גרגרי כוסברה – לא חובה

אופן הכנה קדירת בשר ירקות "דמלמה":

1.  להניח שכבה בצל בסיר גדול עם תחתית עבה ואז להוסיף כמה חתיכות בשר ולתבל במלח ופלפל

2. להוסיף  שכבה כל מיני ירקות ולתבל

3. שוב להוסיף שכבה בשר ולתבל ושוב ירקות וכך עד לסיום כל המרכיבים

4. במרכז הסיר בשכבה עליונה להכניס ראש שום ואת הפלפלון בשלמותו

5.לפזר את הפטרוזיליה וסלרי ולסגור עם המכסה

6. אין להוסיף מים!!! ולבשל על אש גדולה על הכריים כ15 דקות

7. להעביר את הסיר לתנור שחומם לחום 150 מעלות .

זמן משוער של הבישול בין שלוש שעות עד חמש שעות, מומלץ בישול בחום נמוך ואיטי יותר
